Remember your Grandmother cooking a heartwarming and healthy chicken broth with pieces of boiled chicken and vegetables to get better while suffering a cold?
Tschohk, or also called Jok, is the Thai version of it. Thick rice soup with chili seasoned meat balls, celery, spring onions and bird’s eye chilies.
Instead of meat you can also use fish or shrimps for the soup ingredients.
Sliced chicken breast in a creamy peanut butter sauce with spring onions, carrots and cilantro.
Served with basmati rice.
To get a more calorie conscious but still creamy sauce I used plain yogurt and milk instead of cream or coconut milk.
Fried chicken breast in a light herbs sauce made of broth, light cream cheese and fresh herbs.
Glazed carrots, cabbage turnip and bell peppers on the side and served with basmati rice.
Turkey breast grilled with mediterranean herbs in a creamy vegetable sauce and served with basmati rice.
To get a light and calorie conscious but still creamy sauce I used a combination of coffee creamer and light cream cheese instead of pure cream.
