Hearty pancake with a fresh and fruity vegetables – cottage cheese filling.
The pancake is already baked with spring onions in the dough and seasoned with salt and pepper.
For the filling I fried chopped courgettes, onions, mushrooms and bell peppers. Then it was mixed with cottage cheese and sour cream.
Finally I added some fresh tomatoes and basil leaves.
It’s a light and refreshing meal for hot summer days.
